Honey Burnt Butter and Thyme Cake


This cake has featured on every menu in the hotel and is one of the best discoveries of flavour profile. A popular choice, this cake is full of flavour with the base of the cake coming from the burnt thyme butter and honey. Then deliciously joined together with lemon curd, poach pear compote and whipped honey butter cream. Finished off with pear caramel, whiskey pear gel and edible flowers.
